I often say to my husband that if there is one thing that I could do to make my life easier, it would be to hire a chef!!

I spend a lot of time in the kitchen. We very rarely get take away or eat out because I find it really difficult eating out given my need to follow a low FODMAP diet. 

Sunday is bake day and I always try to cook things that make the week easier in terms of grabbing lunch for work, and having healthy lunch box snacks for the kids. Don't get me wrong, we don't get this right all the time, but we try our very best. We are human after all.

Protein balls is something that I love having in the fridge for my afternoon snack with a cuppa. What I find annoying about making protein balls, aside from the fact that my husband eats the majority of them, is that when I find a recipe I generally don't have all the ingredients on hand. So I started making up my own recipe, based on what I felt like eating and the ingredients that I had in my pantry.

This recipe uses our Fig and Walnut granola:

  • 120g Nourished by Carms Fig & Walnut Granola
  • 40g macro mike vegan protein powder (you can use any protein powder that you have on hand and that sits well with your gut)
  • 20g Dates
  • 60ml Coconut Cream

Blitz all ingredients in a food processor and roll into balls. You can also fancy these up by rolling them in desiccated coconut - I generally miss this step ;)

You could also try this recipe with any of our granola blends.

Have fun playing around with different ingredients. You could add peanut butter in place of the dates or almond milk rather than coconut cream. Don't let recipes restrict you.
